Japchae (Glass Noodles)

A stir-fried dish of sweet potato vermicelli, beef slices and an assortment of vegetables, this cuisine is interesting in terms of texture and flavor profile. The sweet potato vermicelli is gray when raw but turns translucent when cooked, giving the name glass noodle, albeit having a chewy bite that is very addictive. The nuttiness of the sesame merges with the umami of the soy, against the crunchy sweetness of the vegetables, giving a refreshing mouthful.
